Chef Paul awaits outcome of national competition
Paul Young, Chef at Huntercombe House in Stockton for the past 8 years, is awaiting the outcome of his entry into a national healthcare cooking competition.
Paul has a wealth of experience having worked in a range of settings, including the Marriott Hotel in London. He uses his expertise to great effect catering to the needs of the young people with autism and other similar conditions, who are cared for at Huntercombe House.
"Often the children have special nutritional needs, this can include gluten free and/or casein free diets" comments Paul.
People with autism can be notoriously 'picky' and Paul has to therefore be especially creative with the menus as they may only eat certain foods. The nature of autism means that great emphasis lies upon the sensory experiences and the menus need to reflect a range of textures and colours.
The Huntercombe House unit was recently awarded 5 star status for Food Hygiene from Stockton Environmental Health.
